I love snacks.

I often prefer snacking to sitting down for a formal meal. Snacks are simple, usually crunchy and salty, and they let me try a variety of flavors in one sitting so I don’t get bored. They’re easy, satisfying, and yes — sometimes they include chocolate and wine, which makes them even better.

This chicken salad might sound simple, but it’s one of those snacky meals that tastes better than you expect. It’s versatile: pile it on crackers, toast, stuff it into an avocado, melt it in a grilled cheese, or tuck it into a warm croissant or pita. It improves after an hour in the fridge and gets even better if you stir in a chopped hard-boiled egg.
My mom made chicken salad all the time when I was growing up. She used canned chicken and always included plenty of celery. I, however, cannot stand celery. It’s the one vegetable I still instinctively pick out of dishes. I can tolerate pepperoni and onions now, but celery remains a deal-breaker.

Years ago I made a grilled Greek chicken salad and substituted Greek yogurt for most of the mayonnaise. I love the tang of yogurt — it brightens the dish and keeps it from feeling heavy. This sweet corn, bacon and scallion version tastes like summer: refreshing, a little heartier than classic chicken salad, and perfect when you want something light but satisfying.

Ingredients
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon smoked paprika
- 2/3 cup plain Greek yogurt, preferably full fat or 2%
- 2 tablespoons mayonnaise
- 1 1/2 tablespoons Dijon mustard
- 1 cup cooked sweet corn kernels
- 4 bacon slices, fried and crumbled
- 4 green onions, sliced
- 2 tablespoons chives
- crackers, toast, or pitas for serving
Instructions

Combine the shredded chicken in a large bowl and season with salt, pepper and smoked paprika. Stir in the Greek yogurt, mayonnaise and Dijon mustard until well combined. Fold in the cooked corn, crumbled bacon, sliced green onions and chives. Taste and adjust seasoning with more salt and pepper if needed. Serve chilled with crackers, toast or pita.
