This blueberry muffin baked oatmeal is hearty, delicious, and keeps you energized through the morning. A sweet cinnamon streusel on top gives it a muffin-like crunch, turning simple baked oats into a treat you’ll look forward to.

Having a ready-to-eat breakfast is one of my favorite ways to start the day. Baked oatmeal is wonderfully chewy and makes a great base for any number of toppings.

Toppings are the best part: nuts, seeds, chocolate, coconut, fresh fruit, or a drizzle of cream or yogurt — pick what you love.

This breakfast is great for many reasons:

Ingredients
- 4 cups old-fashioned rolled oats
- 1 ½ teaspoons cinnamon
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 3 eggs
- 1 ⅓ cups plain Greek yogurt
- 1 cup milk
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- 2 cups blueberries
Streusel
- ⅓ cup brown sugar
- ⅓ cup flour
- ⅓ cup butter
- Pinch of cinnamon
Instructions
- Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick spray.
- In a bowl, whisk together the oats, cinnamon, baking powder, and salt.
- In a large bowl, whisk the eggs, Greek yogurt, milk, maple syrup, vanilla, and almond extract until smooth.
- Add the dry ingredients to the wet and stir to combine. Fold in the blueberries and spread the mixture evenly in the prepared baking dish.
- For the streusel, mash together the brown sugar, flour, butter, and cinnamon with a fork until the butter is incorporated and the mixture resembles coarse sand.
- Sprinkle the streusel evenly over the oat mixture.
- Bake 35 to 40 minutes, until golden and set. Let cool slightly before serving. Serve with yogurt, a drizzle of cream, extra blueberries, or your favorite topping.
