Happy Summer Friday! We’re heading home from vacation today, and I’m excited to make a relaxed, delicious summer meal this weekend.
EATING
I’m planning grilled chimichurri chicken for the main course, plus cantaloupe caprese skewers as a fresh appetizer. I’ll probably do marinated tomato BLTs for a light, bright side — perfect for post-vacation cooking.
DRINKING
Frozen watermelon mojitos are the top pick for drinks — crisp and refreshing. I’m also tempted to mix up a batch of cajun peach lemonade for something sweet with a little spice.
MAKING
For easy and satisfying meals, I’ll prepare rotisserie chicken salad and a burst tomato burrata pasta. Both are quick to pull together and feel special without fuss.
BAKING
I’m craving my coconut zucchini chocolate chip bread. It’s a longtime favorite and bakes up moist and comforting — great for breakfast or an afternoon snack.
GRILLING
Smoky cedar plank salmon is on my grilling list. It grills beautifully and adds a lovely smoky depth that feels quintessentially summer.
CRAVING
I’m really wanting grilled cinnamon sugar toast topped with figs and ricotta — sweet, creamy, and a little crunchy. It’s been on my mind all week.
LISTENING
We’ve been spinning our feel-good Friday playlist in the car — upbeat and perfect for summer drives. It’s become a go-to for road-trip vibes.
READING
My book-of-the-month picks arrive today, and I’m planning to start The Heart Principle this weekend. It’s an early release I’ve been looking forward to and I enjoy the author’s other novels.
SHOPPING
I may grab a few remaining finds from the Nordstrom sale. I already have a pair of Nike shoes I love in black and I’m considering restocking my favorite body cream. I’ll stick to a few tried-and-true items and keep it simple.
BUYING
I finally picked up the 40oz Stanley tumbler everyone talks about. As a long-time Yeti user, I’m excited about a large cup with a handle — it’s great for long days and staying hydrated.
LOVING
I’ve been glued to Ally Love’s wedding week posts on Instagram — such a fun, joyful series of events with themed nights and beautiful details. Following along has been a highlight of the week.
SHARING
Every year Ashley Spivey organizes the Clear The List program to help teachers gather supplies for their classrooms. It’s an inspiring project and a wonderful way to support educators. Many lists are already filled, but she posts updates in her stories if you want to follow along.
PREPPING
When we return from vacation, I’ll start back-to-school prep. If you want an emotional read while you get ready, “Dear Kindergartner, I Could Not Love You More” is one that really tugs at the heartstrings.
