Creamy Mango and Vanilla Bean Smoothie Recipe

Everyone loves a delicious smoothie.

Could I have posted a more boring recipe today while I’m lying on the beach?

Yes. Yes I could have.

It could have involved broccoli.

 

 

Instead I wanted you to feel like you are at the beach right beside me.

You know, minus the rum.

 

 

The verdict on mangoes is still up in the air for me.

I’m not always sure I love them on their own.

I assumed I would—after all, I adore mango-scented lip gloss and body lotion—but when I finally splurged on a ripe mango, the flavor was a little… off. Not at all like the sweet fragrance in those products.

Anyone else feel that way?

Good. Because sometimes I’m not sure either.

 

 

What I do love is mango when it’s paired with other ingredients.

It’s fantastic with seared scallops, coconut, in a fresh-fruit omelet, or even tossed into a bright salad.

Who am I? The sun must be frying my brain.

Mango Vanilla Bean Smoothie

Ingredients:

1/2 mango, chopped

1/4 cup plain Greek yogurt

3/4 cup milk – I used vanilla almond milk

1/2 teaspoon vanilla extract

Seeds from 1/2 vanilla bean

Directions:

Combine all ingredients in a blender and process until smooth. Pour into a glass and garnish with additional mango slices if desired.
