This recipe is a one-pot take on a favorite combination: smoked sausage with peppers, served together with rice so everything cooks in the same pan.
It’s quick to prepare and consistently popular with the kids — they even say the smoked turkey sausage tastes like hot dogs, which makes it an easy win.

I often use smoked turkey sausage for this dish. It’s widely available and lean, and we enjoy its flavor with the rice and vegetables.

How it comes together
Start by browning the smoked sausage in a large skillet or pot. Let the rounds get a deep golden color — that caramelization adds plenty of flavor.
When the sausage is browned, remove it to a plate. In the same pan, sauté onions and bell peppers until soft, then add lots of garlic for aroma.

Once the vegetables are softened, stir in jasmine rice and return the sausage to the pan. Pour in chicken stock — the stock you choose will largely determine the final flavor, so use a good one.
Bring the mixture to a boil, then reduce to a simmer and cover. Jasmine rice usually cooks in about 10–15 minutes, but check after 10 minutes and add a little more liquid if needed. Different rice varieties may require more time and liquid.

When the rice is tender and the liquid is absorbed, finish with sliced green onions. You can also add fresh herbs or a sprinkle of Parmesan if you like.

Ingredients
- 1 tablespoon olive oil
- 12 ounces smoked turkey sausage, sliced into rounds
- Kosher salt and pepper, to taste
- 2 bell peppers, chopped
- 1 shallot, diced
- 4 garlic cloves, minced
- 1 ½ cups jasmine rice
- 3 to 4 cups chicken stock
- 4 green onions, thinly sliced
Instructions

Heat the olive oil in a large pot or skillet over medium heat. Add the smoked sausage rounds in a single layer, season with salt and pepper, and brown on both sides. Transfer browned sausage to a plate.

In the same skillet, add the chopped peppers, diced shallot and minced garlic. Season with additional salt and pepper and cook, stirring often, for 5 to 6 minutes until the vegetables soften.

Stir the jasmine rice into the skillet and cook for 2 to 3 minutes to toast it slightly.

Return the sausage to the pan and add 3 cups of chicken stock. Bring to a boil, then reduce to a simmer and cover. Cook for about 10 minutes, then check if the liquid is absorbed and the rice is tender. If needed, add more stock ½ cup at a time. Jasmine rice typically finishes in 10–20 minutes; adjust for other rice types.
