Ingredients

  • 1 pound lean ground beef
  • kosher salt and pepper
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 6 ounces sharp cheddar cheese, freshly grated
  • 2 sheets thawed puff pastry
  • 1 large egg + 1 teaspoon water, for egg wash
  • 2 tablespoons sesame seeds, for sprinkling

house sauce

  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 1 tablespoon honey
  • 1 tablespoon your favorite BBQ sauce

Instructions

  • Note: use non-perforated puff pastry sheets for best results. The author prefers certain brands that are not perforated.
  • Preheat the oven to 425°F. Place each puff pastry sheet on parchment on a baking sheet. You can work one sheet at a time, keeping the second ready.
  • Cut each sheet into six squares while on the parchment.
  • Heat a skillet over medium. Add the ground beef with a big pinch of salt and pepper and cook, breaking it into small crumbles, until browned. Stir in the ketchup and mustard until combined. Remove from heat and mix in a small handful (1–2 ounces) of grated cheese. Allow the beef to cool slightly.
  • If you haven’t prepared the house sauce, whisk those ingredients together now.
  • Spoon 2–3 tablespoons of the cooled beef mixture onto each puff pastry square. Drizzle with house sauce and sprinkle with a bit more cheese. Brush the edges with the egg wash, fold one corner over to form a triangle, and press the edges with a fork to seal. Repeat with remaining squares.
  • Brush the tops of the pockets with the egg wash and sprinkle with sesame seeds.
  • Bake for about 20 minutes, until golden, puffed and glossy. Let cool a few minutes before serving — fillings will be very hot. Serve with lettuce, tomato, pickles and extra sauce for dipping.
