Pomegranate Pistachio Swirled Chocolate Bark Recipe

Say hello to the most beautiful chocolate bark you’ll ever make!

I like to call this my holiday chocolate masterpiece — and the best part is that it comes together in no time. Dark and white chocolate swirled together, studded with bright pomegranate arils and crunchy salted pistachios for texture and color.

It’s simple, elegant and utterly delicious.

This recipe is embarrassingly easy: melt the dark chocolate, melt the white chocolate, spread and swirl, then sprinkle on pomegranate seeds and chopped pistachios. The contrast of glossy dark chocolate and creamy white chocolate makes a gorgeous marbled effect that looks much more complicated than it really is.

I went through a serious chocolate bark phase when I started blogging — it’s an easy canvas for flavor and decoration. Over the years I’ve made everything from cake batter bark to cookies-and-cream or movie-theater inspired versions. This pomegranate-pistachio version is one of my favorite holiday iterations: festive, bright and a little unexpected.

Here’s why this bark is so great: it looks impressive, takes very little hands-on time, and the flavors are perfectly balanced. The salty roasted pistachios add crunch and depth, while the pomegranate arils bring freshness and a pop of tart sweetness that cuts through the richness of the chocolate.

Because the pomegranate seeds add moisture, this bark should be stored in the refrigerator — it sets faster and keeps better chilled. Serve straight from the fridge for the best texture.

This is a great last-minute treat to assemble when you need a pretty holiday dessert or snack. You can break it into irregular pieces for a rustic platter, or arrange it on a tray for gifting — though I typically keep this one at home because the seeds are best when chilled.

If you’ve been prepping cookies or holiday plates, this bark is a delightful complement to add to the spread. It’s also fun to make while you blast holiday music and sip something festive.

Pomegranate Pistachio Swirled Chocolate Bark

Yield:

1
pan
Total Time:
2 hrs

Ingredients

  • 16 ounces high-quality dark chocolate, chopped
  • 16 ounces high-quality white chocolate, chopped
  • 1/2 cup chopped roasted and salted pistachios
  • 2/3 cup pomegranate arils

Instructions

  • To make the base, melt the chopped dark chocolate in a double boiler or in the microwave at 50% power in 30-second intervals, stirring between each until smooth. Reserve about 2 tablespoons for swirling. Spread the melted dark chocolate onto a parchment-lined baking sheet into a large rectangle (or any shape you prefer) and let it set until firm, about 1 hour at room temperature or about 30 minutes in the refrigerator.
  • Melt the white chocolate the same way. Use high-quality white chocolate bars rather than chips for the best melting texture. Pour the melted white chocolate over the set dark chocolate layer. Add the reserved dark chocolate in small dollops and use a knife or skewer to gently swirl the two chocolates together to create a marbled effect.
  • Immediately sprinkle the pomegranate arils and chopped pistachios over the top, pressing gently so they adhere. Refrigerate for 30 to 60 minutes, until the bark is fully set.
  • Break the bark into pieces and serve chilled. Store any leftovers in the refrigerator to keep the pomegranate seeds fresh.
