I have the chocolate tres leches cake to end all chocolate cakes.

It’s simple, relatively quick, and here’s the twist — it’s soaked in CHOCOLATE MILK.

Trust me, it works. Add this to your menu next week after a night of tacos and margaritas — it’s the sort of dessert everyone will ask about.

I made my first tres leches cake early in our marriage, shortly after moving into our first house. I remember how spotless everything felt back then, and how this cake turned a simple Sunday dinner into a memory: we took a walk in the spring air, came back and had more because it was just that good. I can still picture the baking dish, where we stood to eat it, the light outside — and that familiar Sunday evening melancholy when the weekend ends.

These little food memories stick with you, even when smaller daily details start to slip — like where you put your sunglasses or car keys.

(By the way, autocorrect keeps trying to change it to tres “leeches.” No thanks — I’ll pass on leeches in my dessert.)

I’ve wanted to make a chocolate version for a long time. Cake isn’t always my first choice — I usually reach for cheesecake or a rich peanut butter fudge brownie — but tres leches is unique: light and spongey yet dense and soaked through with milky goodness. It’s perfectly moist without being heavy.

Call it moist — I’ll stand by that word.

Eddie’s cake preference has made an appearance here before: he insists cake must be served COLD, straight from the fridge. I don’t mind cold cake, but I prefer some desserts at room temperature. This chocolate tres leches, however, is best chilled.

Chilling helps it hold its shape when you slice it, and it becomes almost fudge-like — intensely chocolatey and one of the most satisfying bites you’ll taste.

Top it with freshly whipped cream, grate some chocolate on top, add a touch of mint if you like, grab a large fork, and dig in.

Ingredients

  • 1/2 cup hot coffee
  • 6 tablespoons unsalted butter
  • 2 large eggs
  • 2/3 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 cup sugar
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 ounces semi-sweet chocolate, chopped
  • 1/2 cup sweetened condensed milk
  • 1/2 cup evaporated milk
  • 1/2 cup chocolate milk whole or 2%

for topping:

  • 2 cups cold heavy cream beat until peaks form
  • chocolate shavings
  • fresh mint

Instructions

  • Preheat the oven to 350°F. Grease an 8×8-inch pan with butter and set aside. In a measuring cup, whisk the hot coffee and butter until the butter melts, then set aside.
  • In a large bowl, whisk together the eggs, buttermilk, and vanilla. Stir in the sugar, flour, cocoa, baking powder, baking soda, and salt. When the mixture is about halfway combined, pour in the coffee-butter mixture and stir until smooth. Fold in the chopped chocolate. Pour the batter into the prepared pan and bake 40–45 minutes, or until the center is just set. Let cool completely.
  • When the cake is cool, poke the surface all over with a fork so the milk mixture can soak in. Whisk together the sweetened condensed milk, evaporated milk, and chocolate milk. Pour the mixture evenly over the cake (in batches if needed) and watch it sink in. Refrigerate for 30–60 minutes before serving. Top with whipped cream and chocolate shavings. Keep the cake chilled.
