Ingredients

  • 1 pound farfalle pasta
  • 1 pound lean ground beef
  • kosher salt and pepper
  • ½ teaspoon garlic powder
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 16 ounces sharp white cheddar cheese
  • ½ cup chicken stock or reserved pasta water
  • 4 green onions, thinly sliced
  • 2 cups chopped cherry tomatoes

Instructions

  • Preheat the oven to 400°F (200°C).
  • Bring a large pot of salted water to a boil and cook the farfalle according to package directions; drain and reserve a little pasta water if desired.
  • While the pasta cooks, heat a large skillet over medium heat. Add the ground beef with a generous pinch of salt and pepper and the garlic powder. Cook until browned, breaking into small crumbles. Stir in the ketchup and mustard until combined. Remove from heat and stir in 2–3 ounces of the cheddar.
  • Spread the drained pasta across a large rimmed sheet pan. Pour the chicken stock or reserved starchy pasta water over the pasta to keep it moist and tender while baking.
  • Sprinkle half of the cheddar over the pasta, then distribute the ground beef mixture evenly on top. Finish with the remaining cheddar.
  • Bake for 10–15 minutes, until everything is warmed through and the cheese is melted. Remove from the oven and immediately scatter the green onions and chopped tomatoes over the top. Add any additional burger toppings you like.
  • Serve right away. Taste and adjust with salt and pepper if needed.
