Longest. Week. Ever.

Did you feel the same, or was it just me?

 

My breakfasts got more interesting as the week went on, so I wanted to share the highlights.

 

Simple, everyday oats:

Ingredients:

  • oats
  • organic skim milk
  • banana
  • cinnamon
  • vanilla extract
  • dark chocolate dreams peanut butter

 

After a few days of plain oats I needed something more exciting.

 

To Miss Yum Yucky’s horror, I followed Sarah and Holly’s lead and added a scoop of ice cream to warm oats. The result was decadent: ice cream slowly melting into the bowl, adding creaminess and flavor.

Ingredients:

  • oats
  • organic skim milk
  • banana
  • cinnamon
  • vanilla extract
  • 2 tablespoons Coconut Bliss coconut ice cream

It’s as amazing as it sounds.

 

When I was ready to move on from oats I switched to protein pancakes — pumpkin protein pancakes to be exact.

My pancake batter included:

  • 1/2 cup oats
  • 1/4 cup cottage cheese
  • 2 egg whites
  • 1/4 cup canned pumpkin
  • vanilla
  • cinnamon
  • pumpkin pie spice

I blend the oats in a mini food processor, then mix in the remaining ingredients and cook as small pancakes.

 

One morning I took things further and stirred a tablespoon of chocolate/peanut butter swirl chips into the batter — pure indulgence.

Same recipe as above, plus:

  • 1 tablespoon chocolate/peanut butter swirl chips

 

Another new favorite snack:

Mix together:

  • 2 Honeycrisp apples, chopped and microwaved
  • cinnamon
  • 2 teaspoons peanut butter
  • 1 tablespoon plain Greek yogurt
  • 3/4 cup Trader Joe’s Twigs, Flakes, and Clusters

It’s crunchy, tart, and satisfying.

 

On Wednesday evening my thoughtful husband texted that he’d “taken care of dessert.” We rarely have dessert on weeknights, so I was curious.

I expected something indulgent like Cheesecake Factory cheesecake, but he surprised me.

He explained he thought it would be a nice kickoff to my birthday. We had a hilarious mix-up about the actual date — he had it on his calendar for the 5th while I knew my birthday was the 7th. He was disappointed but amused, and joked about wrapping presents badly so I could post about it.

We enjoyed chocolate-covered strawberries and peanut butter cups together. He’s pretty perfect in moments like that.

After dessert he fell asleep on the couch and snored loudly for a while — waking him up later was a challenge. I was relieved it wasn’t actually my birthday that night.
