I’m not exaggerating. This is genuinely incredible.

I love cauliflower gnocchi. I even make it from scratch sometimes. It’s not a direct replacement for traditional gnocchi, but it stands on its own: the texture is wonderful and the flavor adapts easily to different sauces and seasonings.

One of the best parts is how quickly it cooks — you can toast it straight from frozen in a skillet and get golden, crispy edges in minutes.

Then!

After toasting, toss the gnocchi with a bit of cream, fresh lemon and grated parmesan. The result is bright and citrusy, with a light, cheesy richness that complements the crisped gnocchi perfectly. It’s simple, fresh, and comes together in under 15 minutes — ideal for busy weeknights.

This makes a quick main or a flavorful side depending on how much gnocchi you serve. For a family, two bags of frozen gnocchi usually do the trick, or make a batch and a half of a homemade version if you prefer.

Let’s address the lemon: yes, I’ve been sharing lemon-forward recipes lately, and for good reason. Lemon brightens savory dishes and feels especially right when citrus is in season. The citrus lifts the dish so it feels light and fresh while still comforting.

Fresh, bright, and comforting.

The recipe uses just a handful of ingredients (six, not counting salt and pepper). A splash of heavy cream helps the parmesan and lemon zest cling to the gnocchi, but the dish stays light — the gnocchi absorbs most of the cream, leaving a silky coating rather than a heavy sauce.

If you enjoy pan-toasted gnocchi, this version is wonderful. The crisped edges and the delicate lemon-parmesan sauce make each bite satisfying. Serve it as a family side or enjoy a generous bowl for dinner — it’s hard not to keep going back for more.

Ingredients

  • 12 ounces cauliflower gnocchi, frozen or fresh/thawed
  • 3 tablespoons unsalted butter
  • cup heavy cream
  • ¼ cup finely grated parmesan cheese, plus more for topping
  • 2 lemons, zest freshly grated
  • kosher salt and freshly ground black pepper
  • fresh herbs, like basil or parsley, for topping

Instructions

  • Heat the butter in a nonstick skillet over medium heat. Once it is melted and bubbling, add the cauliflower gnocchi — frozen is fine. Cook without tossing for 2 to 3 minutes until the bottom is golden brown. Flip and cook another 2 to 3 minutes until golden and warmed through.
  • Pour in the heavy cream, add the lemon zest and a pinch of salt and pepper, then stir in the parmesan. Taste and adjust seasoning as needed. The gnocchi will absorb some of the cream, creating a light, silky coating. Finish with fresh herbs and extra parmesan if you like, then serve.
