What I’m Loving This Week
There are so many things catching my eye and appetite right now. A grilled ancho chicken taco salad I bookmarked looks like the ideal weeknight dinner when you want something smoky, bright, and satisfying. For baking, a lemon curd blueberry loaf is calling my name — it would be such a lovely thing to slice for coffee or an afternoon treat.
I’ve also been tempted to make a cherry lime splash, a light and bubbly drink that feels like summer in a glass. Speaking of sandwiches, crispy fried fish sandwiches with a cajun tartar sauce look unbelievably good and would be an amazing weekend project if you’re craving something indulgent and crunchy.
On the fresh and simple side, watermelon salsa remains a summer favorite here — it’s bright, refreshing, and pairs with chips or grilled fish. For dessert and baking inspiration, cherry pie bars and caramelitas with a homemade salted caramel filling are on my to-bake list; both are great for sharing at a casual gathering or for keeping in slices to nibble on throughout the week.
I’m also into small, punchy condiments — candied jalapeños are one of those little flavor bombs that elevate everything from sandwiches to charcuterie boards. For a nostalgic scoop, cookie butter ice cream sounds like the perfect creamy, spiced treat to make at home. And for salads, an avocado corn salad is the kind of side that feels effortless and addictive with summer corn at its peak.
Comfort foods are still very much in rotation: creamy, smoky white beans in a garlicky tomato sauce feel like the sort of bowl you want for a cozy night in. Baked oatmeal with apples, cinnamon, raisins, and walnuts is an easy make-ahead breakfast that also doubles as a wholesome snack. And for a fun handheld option, a road trip sandwich — hearty, portable, and loaded with flavors — is high on my list for the next time we hit the road.
