Is there any better combination than chocolate and peanut butter?
I don’t think so. I might even add a salty twist sometimes—bacon or pickles, or both—because I’m a little weird like that.
And no, I’m not pregnant; I just have strange cravings.
These chocolate cookies aren’t overly sweet, which many people will appreciate. Personally I always want more sweetness, but the balance here is just right for most palates.
When it comes to cookies, I usually go heavy on the chips. The “less is more” idea never sticks with me—ever—for anything. I know I should be more restrained; it would probably do wonders for my waistline and my grocery budget.
This time, though, I unintentionally kept things modest. My bag of peanut butter chips was nearly empty, hanging on for dear life. Instead of eating them straight from the bag, I tossed the remaining morsels into the cookie dough—and they worked perfectly.
Even though these cookies aren’t ultra-sweet, each bite with a peanut butter chip delivers a creamy, delightful surprise. The ratio of chocolate to peanut butter is spot-on.
Full disclosure: I often eat a giant spoonful of peanut butter topped with a few handfuls of chocolate chips. When I say often, I mean multiple times a day.
Dark Chocolate Peanut Butter Chip Cookies
1 cup butter, at room temperature
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup peanut butter chips
1/2 cup chocolate chips
Cream together the butter, sugar, eggs and vanilla until light and fluffy. Add the flour, cocoa powder, baking soda and salt, mixing until just combined.
Fold in the peanut butter and chocolate chips. Refrigerate the dough for 1–2 hours. When ready to bake, preheat the oven to 350°F (175°C), roll the dough into balls and place them on a baking sheet.
Bake for 8–10 minutes, then allow the cookies to cool slightly before transferring to a rack.
