Chocolate-Dipped Banana Bites: Quick No-Bake Snack Recipe

I have a problem.

A problem you might already suspect.

I crave something sweet every single day. Maybe I don’t strictly need it, but like the shoeboxes that have taken over my closet, I definitely want it.

And to be honest — I often want something sweet every minute.

I could happily eat dessert for breakfast, lunch and dinner, with a generous side of salt ‘n vinegar chips for that salty contrast.

But my clothes won’t be thrilled if I spill out of them.

And Mr. How Sweet won’t be thrilled when I need a whole new wardrobe because nothing fits.

Enter my little banana bites. They’re simple and versatile.

Chocolate banana bites

My first chocolate-covered banana was at a county fair years ago — I’m talking more than 15 years. I hate that I can say that, but it’s true.

When a banana is dipped in chocolate, there’s often not enough chocolate for my taste. I love bananas, but if I’m eating a chocolate-covered banana, I want equal parts banana and chocolate in every bite.

I also have very sensitive teeth, so biting into a whole frozen banana is painful. Watching people bite into ice cream cones makes me cringe — it’s like nails on a chalkboard.

These mini frozen banana bites are the perfect solution. They offer an excellent ratio of chocolate to banana and are easy on my teeth.

To me, they feel like a guilt-free treat.

Full disclosure: I rarely feel guilt about food, which explains how I can finish an entire pan of brownies in one sitting. But eating a batch of these does much less damage — both to my self-control and my jeans.

A drizzle of peanut butter turns them into something sinfully delicious. If I’m going to indulge, I’ll sin this way — with food. It is Lent, after all.

Ingredients

  • 2
    bananas,
    cut into 1-inch slices
  • 3/4
    cup
    milk or dark chocolate chips
  • peanuts for garnish
  • peanut butter for drizzling

Instructions

  • Slice bananas into 1-inch chunks and freeze for about 60 minutes.
  • Melt the chocolate in a double boiler or microwave until smooth. Remove banana slices from the freezer and dip each piece in chocolate, placing them on wax paper to set.
  • Drizzle with peanut butter or sprinkle with crushed peanuts. Freeze for 10 minutes or until firm, then serve.

Banana bites in yogurt

I mixed banana bites into non-fat plain green yogurt — delicious, though quite cold. I suspect they’d be fantastic stirred into oatmeal, but I haven’t tried that yet because every evening I end up eating the entire tray.
