I came up with this little concoction hoping it would turn out tasty. I mixed cream cheese, peanut butter and powdered sugar, folded in chocolate chips, shaped it into a ball and chilled it until firm. The result was unexpectedly addictive.

I was careful about the peanut butter. I didn’t want an oily finish, so I used Skippy Natural — not truly “natural” in my opinion, but it worked beautifully. A creamier peanut butter would be excellent here, and I imagine it would be phenomenal with a richer chocolate peanut butter like Dark Chocolate Dreams.
I added a few handfuls of chocolate chips. After a few tastings I decided it needed a touch more sweetness, so I adjusted with powdered sugar. The mixture has a cookie-dough-like appearance and texture; it reminded me a bit of cookie dough truffles, and I couldn’t help sneaking some while I worked.

The mixture rolled easily into a ball. I chilled it to firm up, then crushed some graham crackers and rolled the cheeseball in them for a crunchy coating. The graham crumbs add a great contrast to the creamy center.

I didn’t expect it to be such a hit with my husband, my mom or other guests — I thought they might try one bite and leave it at that. The cheeseball isn’t overly sweet, and the idea of a chocolate-peanut-butter appetizer seemed unusual. I was wrong: it disappeared fast, even my husband ate more than a taste.

Ingredients
- 1 (8 ounce) block cream cheese, softened
- 1/3 cup peanut butter
- 1/3 cup powdered sugar
- 1/4 cup chocolate chips
- 1 package graham crackers, crushed
Instructions

Combine cream cheese, powdered sugar and peanut butter in a bowl and mix until smooth. Fold in chocolate chips, shape into a ball and chill until firm.

Crush graham crackers. Remove the cheeseball from the fridge and roll it in the crumbs to coat. Return to the refrigerator until ready to serve.

Serve with graham cracker sticks and vanilla wafers for dipping.
