I’ve always loved apples in every form—hot, cold, shredded, baked, even in salads (as much as I can love salads).

When I spotted apple nachos in the latest Taste of Home, I couldn’t stop thinking about them. They’re the perfect snack: a crisp honeycrisp apple topped with a little chocolate, peanut butter, shredded coconut and salty pecans. With the apple as the base, it almost feels healthy, right?
I added a dollop of Greek yogurt and spread it over the apple and toppings. It’s such a simple idea, but it completely blew my mind. How had I never made these before? If you already knew about apple nachos, why didn’t you tell me?

As I assembled them, I meant to sprinkle cinnamon over the whole plate, but I got distracted by the peanut butter and chocolate and forgot. I only remembered when I looked at the photos. If you make these, definitely add cinnamon—maybe also nutmeg or apple pie spice for extra warmth.
I’m already planning to make these for breakfast. They were such a treat; I’m clearly obsessed. Don’t judge—I can be a little insecure about my foodie passions.

Ingredients
- 1 apple, cored and sliced into thin rounds
- 1 tablespoon peanut butter
- 1 tablespoon chocolate syrup or melted chocolate
- 1 tablespoon caramel drizzle
- 2 tablespoons crushed salted pecans
- 1 tablespoon shredded coconut
- Few chocolate chips
- Anything else you want to add
Instructions
- Core the apple and slice into thin rounds. Arrange the slices on a plate and top with peanut butter, chocolate, caramel, pecans, coconut, chocolate chips, Greek yogurt or any toppings you like. Finish with a sprinkle of cinnamon, nutmeg or apple pie spice if desired.
