Here’s what I realized in the last 12 hours: I have an absurd number of margarita and taco recipes.

I started thinking about putting together a Cinco de Mayo roundup at the request of my internet friends and ended up with my computer freezing from about 64 open tabs. Procrastinator problems.
Last year I first noticed a coconut tequila and I’ve wanted it ever since. As a tequila lover and a coconut enthusiast, I knew it would be a hit. I’d already made strawberry coconut margaritas, one of my go-to drinks, but after making them many times I felt they could be improved. That led to the version you see here.
These margaritas are lightly orange-flavored with a touch of coconut from both coconut water and canned coconut milk. In this case I recommend light coconut milk — it works best. While coconut tequila isn’t strictly necessary, if you love coconut and tequila you’ll want it in your life.

If you want cocktail inspiration, you can never go wrong with a classic margarita on the rocks, or try variations like strawberry, peach, roasted blueberry basil, mango jalapeño, blood orange, or pomegranate. If you prefer frozen drinks, just blend with crushed ice. For a non-alcoholic option, agua fresca in any flavor is refreshing and simple.
My taco collection is equally extensive. Favorites include crockpot cheddar beer chicken tacos, crockpot beer carnitas, smoky sweet potato and black bean tacos, and smoky roasted chicken tacos with spicy goat cheese. Crispy shrimp tacos are among my top blog recipes, and if you’re feeling indulgent, buffalo chicken tacos or crispy margarita chicken tacos are perfect party food. Portobello fajitas with fontina queso are a great meatless option.
Personally, I’m still obsessed with crockpot short rib tacos — because short ribs are life.

Other reliable favorites I make often are cheesy double bean quesadillas and caramelized pineapple quesadillas with spicy strawberry salsa. We also love BBQ chicken enchiladas and buffalo chicken enchiladas — admittedly Tex-Mex sacrilege, but delicious. Tostadas feel like high-maintenance tacos to me, but sweet and spicy glazed chicken corn-avocado tostadas are worth the effort. If your weekend includes snow, tortilla soup is warm and easy. Chicken enchilada pizza or a tequila-lime flank steak fajita salad are great alternatives — and the marinade alone is worth sipping.
If you’re short on time and still want something festive, 20-minute turkey taco nachos are fast and satisfying. Otherwise, chips and salsa or tequila shots with lime are perfectly acceptable plans.

Coconut Creamsicle Margaritas

Ingredients
- 2 ounces Grand Marnier
- 2 ounces orange juice
- 1 1/2 ounces silver tequila
- 1 ounce lime juice
- 1 ounce coconut water
- 1 ounce canned light coconut milk
- 1 ounce simple syrup
- unsweetened shredded, toasted coconut for glass rims
- orange and lime slices for serving
Instructions

To rim glasses, fill a plate with toasted shredded coconut. Rub a sticky substance (honey or leftover frosting) around the rim, then press the rim into the coconut to coat. Fill the glass with ice.

Combine Grand Marnier, orange juice, tequila, lime juice, coconut water, coconut milk and simple syrup in a shaker. Shake well for about 30 seconds, pour over ice and garnish with orange and lime wedges. Enjoy.
