Double Chocolate Chip Whole Wheat Waffles Recipe

Having something sweet for breakfast is my nature.

If it doesn’t come as chocolate, peanut butter, or whipped cream, there must be fruit involved.

And when breakfast combines both fruit and chocolate, it’s off to a great start.

Chocolate chip waffles

My first attempt at these waffles was a disaster: the batter was too thin and I ended up peeling the waffle off the iron piece by piece. Still, I ate it. The chocolate chips were oooey, gooey and utterly delicious.

You can hardly tell these waffles are whole wheat. Each bite delivers a smidge of melted chocolate that makes you forget these are actually a healthier choice, aside from a touch of sugar.

Whole Wheat Double Chocolate Chip Waffles

Ingredients

2 cups whole wheat pastry flour

2 teaspoons baking powder

1/4 teaspoon salt

2 tablespoons sugar

1/4 cup cocoa powder

1 cup skim milk

1 egg

2 tablespoons canola oil

1/2 cup chocolate chips

Directions

Preheat the waffle maker. In a bowl, combine all dry ingredients. Stir in the egg, milk, and oil. If the batter seems too dry, add milk one tablespoon at a time until it is wet but thick. Fold in the chocolate chips.

Spoon about 1/3 cup of batter into the preheated waffle maker and cook for 2–3 minutes, or until the waffle is set and cooked through. Repeat with remaining batter.

This was one of the best breakfasts I’ve had in weeks. Chocolate waffles are quickly becoming a household staple—especially served with a side of bacon.
