This Jarlsberg cheese dip is one of my favorite snacks to make for guests. Make it ahead of time and serve with crackers, pretzels or chips — it’s creamy, cheesy and always a crowd-pleaser.

This is one of my go-to party snacks. It’s especially perfect for game day or weekend gatherings. The dip improves after a few hours in the fridge, is easy to transport, and pairs beautifully with crackers, pretzels or chips.

If you remember my chilled queso from a few weeks ago, this Jarlsberg dip is along the same lines — a chilled, creamy spread — but milder and softer in texture. Jarlsberg is similar to Swiss: buttery, slightly nutty, and delightfully meltable. Its softer texture makes it ideal for a chilled spread that’s reminiscent of classic pimento cheese, but lighter and very spreadable.

Grate the Jarlsberg (I like larger shreds here), fold it together with the other ingredients, and let it rest in the refrigerator. After a few hours the flavors meld and the texture becomes irresistible.

The dip doesn’t look like much at first, but once it’s chilled it transforms into a rich, creamy spread. I first encountered a similar store-bought version at gatherings and loved it instantly. It’s nostalgic for me — my family remembers it from years past — and making it at home is simpler and better-tasting than most grocery versions.

Ingredients
- 2 ½ cups freshly grated Jarlsberg cheese
- ¾ cup mayonnaise
- 3 tablespoons diced red onion
- 2 tablespoons milk
- 2 tablespoons chopped fresh parsley
- 1 tablespoon freshly squeezed lemon juice
- Pinch of kosher salt and pepper
- 1 tablespoon chopped fresh chives, for topping
Instructions

Combine all ingredients except the chives in a bowl and mix until evenly combined. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

When ready to serve, taste and adjust seasoning with salt and pepper as needed. Sprinkle with chives and serve as a spread or dip with crackers, pretzels or chips.
