Creamy Mango and Vanilla Bean Smoothie Recipe

Everyone loves a delicious smoothie.

Could I have posted a more boring recipe today while I’m lying on the beach?

Yes. Yes I could have.

It could have involved broccoli.

 

 

Instead I wanted you to feel like you are at the beach right beside me.

You know, minus the rum.

 

 

The verdict is still out on mangoes for me.

I’m not sure I love them on their own.

I expected to — I adore mango-scented lip gloss and lotion — but when I finally splurged on a fresh mango it tasted a little… off. Not at all like the fragrant products I’m used to.

Anyone else know what I mean?

Good. Because sometimes I don’t.

 

 

That said, mango is fantastic when paired with other ingredients.

It’s wonderful with seared scallops, silky coconut, folded into a fruit omelet, or tossed into a bright salad.

Who am I? The sun must be frying my brain.

Mango Vanilla Bean Smoothie

Ingredients:

1/2 mango, chopped

1/4 cup plain Greek yogurt

3/4 cup milk — I used vanilla almond milk

1/2 teaspoon vanilla extract

Seeds from 1/2 vanilla bean

Instructions:

Combine all ingredients in a blender and blend until smooth. Taste and adjust sweetness or milk to reach your preferred consistency. Serve chilled and garnish with additional mango slices if desired.
