Two years ago a family member made a pineapple palm tree for the 4th of July and we all fell in love with it. I shared it on Instagram and so many of you loved it too. Ever since, I wanted to recreate that whimsical fruit display.

I’m not particularly handy—I can barely hammer a nail—so the idea of stacking pineapples with stakes made me nervous. But I can chop a lot of fruit, and I decided it was time to try stacking pineapples anyway.

It turns out it’s much easier than it looks. We used thin garden stakes from a hardware store and bamboo skewers like the ones you’d use on the grill. Those simple tools hold the pineapples together without drama.

The main tip is not to stack too many pineapples. Three is the ideal height; two also looks great. Four or more becomes unwieldy and looks unbalanced unless you’re building an enormous display for a wedding or very large event.

For the top “leaves” you can use any palms, ferns, or greenery—Costco carried what we used. Arrange chopped fruit around the base to create a colorful platter for guests to enjoy.

This is such a fun and charming way to present fruit. It’s not something I’d do for a last-minute weeknight dinner, but it’s perfect for a summer cookout or holiday party.

The one drawback is that you can’t assemble it too far in advance. Pineapple is a softer fruit, so if you build the tree the night before it may not hold up. However, assembly is quick once you have everything prepped.

My recommendation: chop and store all the fruit in the fridge ahead of time. Then assemble the pineapple tree shortly before serving and arrange the fruit around the base.

It’s easy, and it gets simpler with practice. You’ll be proud of how it turns out.

Notes on building your pineapple palm tree:

* Don’t worry if the tree is a little crooked—real palm trees aren’t perfectly straight, and a slight lean adds character.

* Some people core the pineapples to make them lighter and a bit more stable. I didn’t core mine and it worked fine, but a cored pineapple will be easier to move once assembled.

* Wash and chop all the fruit for the base before assembling the tree.

* Choose where the tree will stand and build it there so you don’t have to move it afterward.

* The tree can be transported if needed. A family member once brought one to a party—either transport it in a large box or assemble most of it at the destination and bring the chopped fruit in containers.

Ingredients

  • 3 whole pineapples (try to find one with a flat bottom that stands well)
  • assorted chopped fruit of your choice
  • bamboo skewers
  • thin garden stakes
  • ferns or greenery for the top

Instructions

  • Note: Core the pineapples if you prefer. Coring reduces weight and can make the stack slightly more stable. Leave enough pineapple flesh so stakes and skewers have solid purchase.
  • Slice the tops off each pineapple. Choose the pineapple that stands the steadiest as the base and place it on a cutting board or directly on the serving tray. Insert 3–4 bamboo skewers around the edges, then press the second pineapple onto those skewers so it sits securely.
  • Add another 3–4 skewers through the second pineapple, then place the third pineapple on top. Push additional skewers straight down through the stack if needed to stabilize the pineapples.
  • Insert one or two thin garden stakes straight down through the top pineapple into the two lower pineapples for extra support. Use additional stakes if the tree still feels wobbly.
  • Move the assembled pineapple tree onto a large plate, tray, or serving dish where you plan to display it.
  • Take one of the pineapple tops, skewer it with a bamboo skewer, and set it on top of the tree. Insert ferns or greenery into the top pineapple to mimic palm leaves—there’s no wrong way to arrange them.
  • Arrange the chopped fruit around the base of the tree however you like. Think of it like building a colorful fruit board—balance and variety look great.
