I have a simple, quick dinner idea for you that centers on two of my favorite ingredients: butter and cheese.

Some people insist cheese and fish don’t belong together. I disagree. Cheese pairs beautifully with many dishes, including mild white fish. If you love rich, comforting flavors, this combination is an easy way to turn a basic fillet into something memorable.

Earlier I made a garlic basil butter for a gnocchi dish, and it occurred to me how well a simple, buttery garlic-parmesan topping would work on fish. With just a bit of oven time and a quick broil, the cheese becomes golden and bubbly, while the butter keeps the fillets tender and flavorful.

Butter elevates the texture and taste, and a small amount goes a long way. Each fillet gets less than a tablespoon of the butter-cheese mixture, which keeps this dish light enough for a weeknight meal while still feeling indulgent.

This recipe uses only five ingredients that you likely already have on hand: tilapia, butter, parmesan, garlic, and thyme. That makes it a convenient, no-fuss option for busy evenings. Fish can be simple, quick, and delicious.

I like serving mild white fish with lemon because it brightens the flavors and adds a fresh finish. A squeeze of lemon evokes summer memories for me — days at the beach and warm evenings — and it complements the buttery, cheesy topping perfectly.

Perfectly flaky and satisfying, this baked parmesan tilapia is an easy main course that works with many sides.

Easy Baked Parmesan Tilapia

Makes 4 tilapia fillets

  • 4 tilapia fillets (fresh or thawed if frozen)
  • 3 tablespoons butter, at room temperature
  • 1/4 cup grated or shredded Parmesan cheese
  • 1 garlic clove, minced
  • 1/4 teaspoon dried thyme
  • Salt and pepper to taste
  • Lemon slices for serving

Preheat the oven to 400°F (200°C).

Pat the tilapia fillets dry with a paper towel and season both sides with salt and pepper. Arrange the fillets on a baking sheet coated with nonstick spray or lightly brushed with oil. Bake for 10–12 minutes, until the fish is opaque and flakes easily with a fork.

While the fish bakes, combine the softened butter with the minced garlic, thyme, and Parmesan cheese until well mixed.

Remove the pan from the oven and gently flip the fillets. Spread roughly 1/2 tablespoon of the butter mixture over each fillet. Turn the oven broiler on and place the fillets under the broiler for 2–3 minutes, watching closely, until the cheese melts, bubbles, and develops a light golden color.

Serve immediately with lemon slices for squeezing over the fish.

This tilapia is versatile: serve it over steamed rice, on a bed of greens for a warm salad, tucked into a sandwich, or alongside roasted vegetables. The simple Parmesan-butter topping adds flavor without overwhelming the delicate fish, making this a reliable weeknight favorite.
