Crunchy, thin fries get a boost from salty, creamy feta, a spicy-sweet honey drizzle, and a shower of herbs. This combination is simple but irresistible and works perfectly for parties, game day, or casual get-togethers.

These fries are ideal for sharing. They’re easy to make in large batches and always disappear fast at gatherings. If you want a stress-free, flavor-forward side dish, this is it.

I never expected to be the person recommending jazzing up a bag of frozen fries, but this method truly transforms them. The trick is choosing thin, crispy fries so they stay crunchy and don’t go soggy.

Roasting the fries until they’re nearly done, then adding the feta and returning them to the oven for a few minutes, melts the cheese just enough to make it creamy and helps it cling to the fries instead of falling to the bottom of the pan.

When the fries come out warm, finish with a generous drizzle of hot honey (adjust the amount to your heat preference) and a big sprinkle of chopped fresh herbs to add brightness and a cooling counterpoint to the spice. Freshly cracked black pepper adds a final touch.

All it takes is:

  • Crumbled feta cheese
  • A drizzle of hot honey
  • Lots of fresh herbs

That’s it. The recipe below is a guideline — feel free to layer more feta, honey, or herbs to suit your taste.

Once assembled and seasoned, serve immediately while the fries are hot and the feta is slightly warmed and creamy.
