Ingredients

  • 2 to 3 pounds sweet potatoes
  • 3 tablespoons olive oil
  • 1 tablespoon ranch seasoning
  • 2 tablespoons chopped chives
  • ranch dressing for serving

Instructions

  • Cut each sweet potato into 2–3 thick rounds (about 1 inch thick). For very large potatoes, cut into 4–5 pieces. You can leave the skin on or peel if you prefer.
  • Preheat the oven to 450°F (230°C).
  • Place the potato rounds in a large pot and cover with cold water. Bring to a boil and simmer until just barely fork-tender, about 10–15 minutes. Drain and let them cool slightly so they are easy to handle.
  • Brush a baking sheet with 1½ tablespoons of olive oil. Arrange the potatoes on the sheet and gently smash each one with the bottom of a glass or your hand, keeping them as intact as possible. Sprinkle the ranch seasoning evenly over the tops. If you like, give the potatoes a light spritz or brush of olive oil to promote browning.
  • Roast until golden and crispy, about 25 minutes, rotating the sheet if needed for even browning. Remove from the oven, sprinkle with chopped chives, and serve with ranch dressing. Optional: finish with a light dusting of Parmesan.
