I adore cocktails with a touch of cucumber—when balanced right. Too much cucumber and the drink can start to taste like salad, and not in a good way.

Eddie absolutely hates cucumbers. If he orders a green juice with cucumber by mistake, he can barely drink it. That kind of aversion is serious—kind of like my relationship with celery.
Please, don’t bring that stuff near me.
Nope. You could cover it in chocolate and bacon and put it on avocado toast and I still wouldn’t eat it.

I was tempted to call this a cucumber cooler because it tastes bright and nostalgic—the kind of fluorescent green Hi-C Ecto Cooler I craved as a kid on long summer days. I didn’t even like juice back then, but that neon green stuff was irresistible.
Also: why isn’t anyone outside anymore? Are we all working and then hiding inside on our devices? I hope at least some of you are mixing cocktails and enjoying the sunshine.

This drink—let’s just call it juice—is incredibly refreshing on a hot day:
- It’s light,
- it’s cold,
- it quenches your thirst,
- and it doesn’t leave you feeling wrecked the way a bunch of beers or a heavy margarita might.
It’s everything your summer wants.

Cucumber Vodka Soda

Ingredients

cups
fresh cucumber juice,
you will need 2 to 3 seedless cucumbers -
1/2
cup
freshly squeezed lime juice -
1/2
cup
vodka -
1/4
cup
simple syrup -
1 to 2
cups
cold seltzer water,
lime is great! - crushed ice for serving
- lime and cucumber slices for garnish
Instructions

To make the cucumber juice (if you don’t have a juicer), peel and puree seedless cucumbers (about 2) in a blender with a splash of water. Strain the puree through a fine mesh into a large measuring cup.

In a large pitcher, combine the cucumber juice, lime juice, vodka and simple syrup. Stir well and refrigerate for at least 1 hour. Before serving, add cold seltzer starting with 1 cup, taste, and adjust with more simple syrup or seltzer as desired. Serve over crushed ice and garnish with lime wedges and cucumber slices.

If you want a stronger cucumber flavor, use cucumber-flavored vodka.
