We entertained a little this weekend, and I like to have a sweet treat ready after a meal. We usually skip a big sit-down dinner and instead share several small plates. I love it—everyone gets a bit of everything, and I get to cook a variety of dishes.
I wanted a chocolate dessert and debated for days what to make. I wanted something simple yet decadent—minimal effort but maximum butter.
I settled on my ooey-gooey, fudgy brownies and added a generous splash of Bailey’s Irish Cream. Chocolate and Bailey’s are a classic combination that’s hard to beat.

Bailey’s always makes me think of special occasions. Growing up it was often served after parties, events, or holidays. Not that I would know firsthand—only hypothetically, of course.
The brownies turned out perfectly: moist and fudgy with just a hint of Bailey’s. A scoop of coffee ice cream would be an amazing addition.

I actually do have coffee ice cream in the freezer, tucked behind several bags of frozen chicken and vegetables I keep promising I’ll use someday.
Someday might come—perhaps in the event of an alien abduction.
For now I keep piling things into the freezer until my husband comments on the chaos.
Even without the ice cream, the brownie wasn’t complete without a glass of Bailey’s on the side. I even dunked a brownie into the Bailey’s—utterly divine. One of the wisest things I’ve done.

Well, besides the first time I dunked a french fry in gravy—that was a revelation.
No judgment allowed.
Bailey’s Brownies
Ingredients:
1 stick unsalted butter
2–3 squares baking chocolate
2 cups sugar
2 eggs
1 cup flour
1 teaspoon vanilla
1/4 cup Bailey’s Irish Cream Liqueur
Directions:
Preheat the oven to 350°F (175°C).
Melt the butter and baking chocolate together in a microwave-safe bowl. In a mixing bowl, combine the melted butter and chocolate. Add the sugar and vanilla, and beat until the mixture is slightly fluffy, about 2–3 minutes. Add the eggs one at a time, beating after each addition. Stir in the flour just until combined, then fold in the Bailey’s.
Pour the batter into a greased 9 x 13-inch baking dish (or a 10 x 10-inch square pan). Bake for 35–45 minutes, or until the brownies are just set and still fudgy in the center. Allow to cool before slicing.

You need to make these. They’re rich, fudgy, and dangerously good. Share them with friends, enjoy a scoop of coffee ice cream if you like, or dunk each bite in Bailey’s for an extra indulgent touch.
It’s the kind of treat that turns a simple weekend into something memorable.
