My mom has always made vegetable pizza, and everyone in the family loves it.
As much as I like that, this time I had to try something different: fruit pizza!

I remember my mom making a fruit pizza years ago, and I was completely obsessed. It must have been at least 15 years back.
She still had the recipe, and I was thrilled to try it again.

This dessert is indulgent because the crust is a baked sugar-cookie base. It’s rich, but if you keep the cookie layer and the cream cheese topping thin, it feels light and refreshing.
You can top it with any combination of fruit you prefer.

This always gets a great reaction—it’s a crowd-pleaser and a must-try. Since it’s loaded with fresh fruit, it also feels like a naturally bright and fruity dessert.
One small twist: the cream cheese filling includes a bit of coconut rum, which gives the pizza a subtle tropical note.

Ingredients
Fruit Pizza
- 1 Pillsbury sugar cookie dough
- 4 oz cream cheese, softened
- 1 tub Cool Whip
- 2 tablespoons coconut rum
- 1 cup sliced strawberries
- 3/4 cup blueberries
- 2 kiwis, sliced
- 1 banana, sliced
Glaze
- 1/3 cup sugar
- 1/3 cup orange juice
- 2 tablespoons lemon juice
- 1 1/2 teaspoons cornstarch
- 1/4 teaspoon salt
Instructions

Preheat the oven to 350°F or follow the temperature on the cookie dough package.

Let the dough warm to room temperature, then press it thinly onto a cookie sheet. Bake about 10 minutes, rotate the pan, and bake another 5 minutes, adjusting for your oven and dough temperature. Watch closely to avoid overbaking.

Once the cookie crust has cooled, beat the softened cream cheese, coconut rum and Cool Whip until smooth. Spread the mixture over the crust, then arrange strawberries, kiwis and blueberries, leaving space for the bananas (add them last so they don’t brown). Chill while you prepare the glaze.
Glaze

Combine sugar, orange juice, lemon juice, cornstarch and salt in a small saucepan. Bring to a boil, stirring constantly, until the mixture thickens. Let cool about 10 minutes.

Arrange banana slices on the pizza, drizzle the cooled glaze over the fruit, then refrigerate for at least 1 hour before serving.
