Grilled Chicken, Bacon & Spinach Flatbread Pizza Recipe

Don’t worry — I haven’t broken my Lenten promise to give up bacon.

Though I’m dangerously close.

I’ve been dreaming about bacon lately after creating several irresistible bacon recipes this past week. Since I’m not eating it right now, my mind is on bacon overload.

A few weeks ago I made this flatbread pizza alongside a roasted vegetable and goat cheese flatbread pizza. If you need proof, ask Caitlin — she happily sampled some with me.

I’ve wanted another slice ever since. I can be a total glutton.

What made this flatbread stand out was seasoning the dough and giving it a quick pre-bake before adding the toppings. It puffs a tiny bit for a flatbread, but I’ll call it whatever I like.

It’s my dough and I’ll name it as I wish.

Before adding the chicken and bacon I made a rich spinach mixture. I combined whipped cream cheese, freshly sautéed spinach and garlic, and plenty of Parmesan to create a creamy, savory base.

My husband looked at the green cream and swore that ‘that stuff’ wasn’t going on his pizza. Clearly this one was his pizza in his mind — heaven forbid he eat pizza with only vegetables and no meat. We have sharing issues in this house; it’s good practice for parenthood.

Of course I used a little trick and told him it was going on the vegetable pizza. He fell for it: bacon and chicken are hard to resist.

One bite in and he declared it delicious without even asking what was in the green mixture.

This pizza is hearty and filling, layered with a variety of complementary flavors.

With grilled chicken, crispy bacon, and lots of bubbly, golden cheese, it’s a combination that rarely goes wrong.

Grilled Chicken, Bacon and Spinach Flatbread Pizza

Ingredients

  • Flatbread Pizza Dough
  • 1 packet active dry yeast
  • 1 1/2 cups warm water
  • 3 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil

Flatbread

  • 6 oz grilled chicken, shredded
  • 6 slices bacon, fried and torn apart
  • 4 cups spinach
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1/2 block (4 oz) cream cheese
  • 1 cup Parmesan cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated smoked cheddar cheese

Instructions

Flatbread Pizza Dough

  • Mix the yeast with warm water and let it become foamy, about 15 minutes. In a large bowl, combine about 2 1/2 cups flour, salt, and Italian seasoning. When the yeast is foamy, add it to the flour and mix by hand, adding more flour as needed. Cover and let the dough rise in a cool, dark place for 2 hours.

Grilled Chicken, Bacon and Spinach Flatbread Pizza

  • Preheat the oven to 375°F (190°C).
  • Divide the dough in half and shape each portion on a round pan or baking sheet. Bake the dough alone for 15 minutes, then remove and set aside.
  • Sauté the spinach in 1 tablespoon olive oil with the minced garlic until wilted. While warm, combine the spinach with the cream cheese and 1/2 cup Parmesan, mixing until smooth.
  • Brush each pre-baked crust with 1 tablespoon olive oil. Spread the spinach mixture over the dough, then sprinkle with 1/2 cup mozzarella. Top with shredded grilled chicken and torn bacon. Finish by sprinkling the remaining Parmesan, cheddar, and mozzarella over the top.
  • Bake for 20–25 minutes, or until the cheese is bubbly and golden brown. Slice and serve hot.
