For years I swore I loved plain pizza best, but lately I’m all about piling on interesting flavors. On a recent night in NYC we had a carbonara pizza that blew my mind — I’m planning to recreate and share that soon — but for now this hot honey pepperoni pizza has my full attention.

The balance here is what makes it interesting: crispy-edged, cheesy crust; pepperoni with a little bite; creamy, tangy goat cheese to balance the heat; and hot honey that’s both spicy and sweet. I also scatter candied jalapeños over the pizza and finish it with fresh arugula for peppery crunch and brightness — a quick way to add greens and some freshness to the slice.

Ingredients

  • 1 DeLallo Foods pizza kit
  • 3 tablespoons olive oil
  • 1 1/2 cups marinara sauce
  • 4 ounces goat cheese
  • 2 ounces sliced pepperoni
  • 1/2 teaspoon dried oregano
  • 1 1/2 cups freshly grated provolone or mozzarella
  • 4 cups baby arugula greens

hot honey

  • 1/2 cup honey
  • 1 jalapeño pepper thinly sliced (keep the seeds in for extra heat)

Instructions

  • Prep the dough according to the kit directions and let it rise.
  • Drizzle 2 tablespoons olive oil into a 9×13-inch pan. Knead the dough briefly and press it into the pan, stretching toward the edges. If it springs back, let it rest 10 minutes and try again. Once it reaches near the edges, cover and let rise another 30 minutes.
  • Preheat the oven to 550°F (or as hot as your oven will go).
  • Use your fingertips to press the dough and remove large air bubbles. Spread marinara sauce over the dough, leaving a small border. Crumble about 3/4 of the goat cheese, scatter most of the pepperoni, then add the grated cheese and a sprinkle of oregano. Add a bit more sauce if desired; sauce near the edges will crisp as it bakes.
  • Bake 15–20 minutes, until cheese is golden and the crust edges are crisp and browned. Toss arugula with 1 tablespoon olive oil. Remove pizza, drizzle with a few tablespoons of hot honey, top with arugula and remaining goat cheese. If you reserved candied jalapeños from the honey, add them now. Slice and serve.

  • Warm the honey and sliced jalapeños in a small saucepan over medium-low heat until the honey gently simmers. Turn off the heat and let steep 5 minutes. Strain through a fine mesh sieve to remove peppers and seeds; reserve the peppers to top the pizza if you like.
