This queso is for cauliflower lovers. We add roasted cauliflower to the queso rather than trying to replace the cheese entirely. Because cauliflower is part of the mix, there may be a little less milk or cheese than in a classic queso, but it remains a cheesy, melty dip with satisfying cheese pulls.

The texture is slightly thicker, similar to a squash queso: not perfectly silky smooth, but not gritty or lumpy either—especially if you pulse the cauliflower in a food processor. If you prefer more texture, you can skip pureeing and leave the cauliflower chunkier; it will still be delicious.

Roasting the cauliflower adds extra depth and caramelized flavor, but if you’re short on time you can use pre-riced cauliflower or skip roasting and still get a tasty dip.

This version also uses charred poblanos. I like to char mine over the gas flame and steam them before peeling and chopping, but you can simply chop and sauté them with the onions if you prefer. Either way, they add a ton of flavor.

Ingredients

  • 1 small head cauliflower, cut into florets
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

  • 1 poblano pepper
  • 1 teaspoon olive oil
  • 1 tablespoon unsalted butter
  • 1/2 sweet onion, diced
  • 2 garlic cloves, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups half and half
  • 1 tablespoon cornstarch
  • 8 ounces sharp white cheddar cheese, freshly grated
  • 8 ounces monterey jack cheese, freshly grated

Instructions 

  • Preheat the oven to 425°F. Line a baking sheet with parchment or foil.
  • Arrange the cauliflower florets on the sheet, drizzle with olive oil, and season with salt and pepper. Roast 20 to 25 minutes until edges are golden. Reserve a few florets for topping, and transfer the rest to a food processor. Pulse until combined and as smooth or chunky as you like—the texture will carry through to the dip.

  • Char the poblano over a gas flame or under the broiler, then steam it in a bag for a few minutes. Peel, seed, and chop. If you prefer, skip charring and just chop and sauté it with the onion.
  • In a saucepan over medium heat, add the olive oil and butter. Stir in the chopped poblano, onion, and garlic. Season with salt and pepper and cook until the onion softens, about 5 to 6 minutes.
  • Slowly stream in 1 cup of the half and half, whisking continuously. In a separate bowl, whisk the remaining 1/2 cup half and half with the cornstarch until smooth to make a slurry. Stir the slurry into the saucepan and cook for a minute until the mixture thickens, then reduce heat to low.
  • Add the grated cheeses a small handful at a time, stirring until each addition melts. Stir in the cauliflower puree until combined. The color may darken slightly or look speckled. Taste and adjust salt and pepper. If the mixture becomes too thick, whisk in more milk starting with 1/4 cup.
  • Transfer to a warming dish, bowl, or small slow cooker on low. Top with the reserved roasted florets and any garnish you like—quick pico, cilantro, or sliced green onion are great. Serve immediately.
  • Stir occasionally while serving and keep over low heat to maintain warmth. The queso is thicker than a pourable sauce but is fantastic spooned over nachos, tacos, or taquitos.
