Ingredients

  • 2 hard boiled eggs preferably cold so they grate easily
  • 2 slices bread toasted
  • 1 avocado
  • 1/8 teaspoon red pepper flakes
  • salt and pepper to taste
  • 1 radish thinly sliced

  • lemon wedges for serving

Instructions

  • To make tender boiled eggs: place eggs in a saucepan and cover with cold water. Heat over medium heat and when the water begins to simmer, let it simmer for 1 minute. Remove from heat, cover, and let sit for 10 minutes. Transfer eggs to an ice bath and chill at least 30 minutes before grating or storing.
