Here’s another avocado toast idea — specifically an egg-and-avocado toast that’s simple but elevated.

This version stuck with me after trying a similar toast at The Press Hotel during a trip to Maine. It’s the classic combo I eat often — avocado plus egg on toast — but a few tweaks make it feel special and a little fancy.

Speaking of Maine, I’m itching to go back. We visited in late August and it was perfect — I’d love to return at the same time of year and stay right on the beach. There are so many choices for location and lodging, and of course I left planning until the last minute, so the best spots might be booked. Typical.
Part of why I want to go back is to enjoy this toast again. It’s a bit much for an early weekday breakfast for me, but it’s ideal for brunch, lunch, or even a relaxed dinner.
At least, it’s dinner in my book — Eddie might disagree.

I’m presenting this as a recipe because those little details matter. The main trick is shaving a hard-boiled egg. Sounds odd at first, but shaving simply means grating the cooled egg on a cheese grater to create delicate, ribbon-like shavings. It’s not something you’ll do on a rushed weekday morning, but it’s perfect for a leisurely weekend breakfast or brunch when you want your avocado toast to feel a little extra.
The Press Hotel’s version had a lemon emulsion drizzled on top. Lemon was fine, but I don’t love citrus paired with avocado toast — it reads too much like guacamole for me — so I prefer just a light spritz of lemon instead.
Finish the toast with crunchy radish slices, chopped chives, plenty of salt and pepper, and a pinch of red pepper flakes for heat. The result is bright, textural, and satisfying without being complicated.

Ingredients
- 2 hard boiled eggs preferably cold so they grate easily
- 2 slices bread toasted
- 1 avocado
- 1/8 teaspoon red pepper flakes
- salt and pepper to taste
- 1 radish thinly sliced
- 1 tablespoon chopped chives
- lemon wedges for serving

To make tender boiled eggs: place eggs in a saucepan and cover with cold water. Heat over medium heat and when the water begins to simmer, let it simmer for 1 minute. Remove from heat, cover, and let sit for 10 minutes. Transfer eggs to an ice bath and chill at least 30 minutes before grating or storing.

Grate the cold hard-boiled eggs on a cheese grater to create shavings. Toast the bread.

In a bowl, mash the avocado to your preferred consistency and mix in red pepper flakes and a pinch of salt and pepper. Spread the avocado on each slice of toast, then pile on the egg shavings.
