These cookies disappeared so fast they never made it into a jar. I can only remember my husband eating one — the rest were gone before he knew it.
They’re basically a type of meringue, though I hadn’t made meringues before trying this recipe. What I do know is they’re incredibly close to the chocolate chewies from Whole Foods, which I’ve been trying to recreate.
I ate mine the same way I eat those chewies: several at once because I just couldn’t stop.
The method is simple — whisk egg whites with cocoa and sugar until glossy and stiff, then fold in dark chocolate chips.

Fold in plenty of dark chocolate for extra richness.

Technically a lighter treat — if you ignore the cup of sugar. Still, they feel indulgent and surprisingly delicate.
I dropped large spoonfuls onto a baking sheet and put them in the oven for a very long, slow finish.

Important: these aren’t a quick fix. After placing the tray in a preheated oven, you turn the oven off and leave the cookies inside for eight hours without opening the door. That slow, gentle drying is what gives them a crisp exterior and a tender interior.
If you’re an oven-peeker like me, make these right before bedtime and let them sit overnight.
They bake up pretty and delicate — perfect with a cup of coffee or tea.

Sin City Cookies
2 egg whites
3/4 cup sugar
2 heaping tablespoons unsweetened cocoa powder
1/2 cup dark chocolate chips
Preheat oven to 375°F.
Beat the egg whites with the sugar and cocoa until stiff peaks form and the mixture is shiny and smooth. Gently fold in the chocolate chips. Drop spoonfuls onto a lined or lightly greased baking sheet.
Place the sheet in the hot oven, then turn the oven off and let the cookies sit undisturbed for 8 hours. Do not open the oven door during this time.
After they’ve dried slowly in the warm oven, remove and let cool before serving.

Enjoy — but if you’re aiming for six-pack abs, maybe limit yourself to a couple. 🙂
