Sin City Cookies: Iconic Las Vegas Cookie Shop Guide

These cookies disappeared so fast they never made it into a jar. Well, mostly I devoured them — my husband managed to steal just one. They’re light, chocolatey, and dangerously easy to eat in bunches.

 

They resemble meringues, though this was my first time making anything like them. The texture is close to the chocolate chewies sold at Whole Foods, a flavor and chew I’ve been trying to recreate.

 

I admit I ate them the way I eat those chocolate chewies: four at a time because I simply couldn’t stop.

 

The recipe is incredibly simple — just beaten egg whites, cocoa, and sugar.

Then I folded in a generous handful of dark chocolate chips.

It’s basically egg whites and dark chocolate — sounds like a healthy choice, right? Well, almost; the sugar keeps these firmly in the treat category.

 

Despite their simplicity, they require patience. I spooned large dollops onto a baking sheet and set them in the oven for a long, slow bake.

This isn’t a dessert to make if you need something immediate — they stay in the oven for eight hours with the door closed. If you’re an oven-peeker like me, plan to start these right before bedtime.

 

The finished cookies are delicate and pretty, with a crisp exterior and chewy chocolate inside.

Sin City Cookies

2 egg whites

3/4 cup sugar

2 heaping tablespoons cocoa powder

1/2 cup chocolate chips

Preheat the oven to 375°F.

Beat the egg whites with the sugar and cocoa until stiff peaks form. Gently fold in the chocolate chips. Spoon the mixture into large mounds on a baking sheet and place them in the oven.

Turn the oven off and leave the cookies inside for 8 hours without opening the door.

When they’re done, enjoy them immediately. If you’re watching your waistline and aiming for abs, stick to just one or two — they’re that good.
