I love strawberry cocktail season!

When I returned from the start of my book tour, the first thing I did wasn’t laundry, grocery shopping, or cleaning. Instead I recreated a drink I enjoyed at The Plaza Champagne Bar so I could share it.
This cocktail is fantastic and, since it’s made with tequila, it’s perfect for Cinco de Mayo or any spring celebration.

I posted photos to Instagram stories and many of you asked for the recipe, so here it is.

Start by muddling chopped strawberries with a pinch of sugar and tequila. You’ll end up with a sweet strawberry-tequila base that’s delicious on its own.

Pour that mixture into the bottom of your glass and top with chilled champagne. I prefer a dry or semi-dry champagne so the drink isn’t too sweet.

Finish with a thin slice of jalapeño dropped right into the drink. I suggest leaving the seeds in — they disperse through the cocktail and give a gentle kick when you sip.
I made only one small change from the version I had at The Plaza: the glass size. I didn’t have the tiny glasses from the bar, so I used slightly larger ones. It works just fine.

Ingredients
- 1/3 cup chopped strawberries
- 1/2 teaspoon sugar
- 2 ounces tequila
- 4 ounces chilled dry or semi-dry champagne
- thinly sliced jalapeño for garnish
Instructions

Place the chopped strawberries in the bottom of a cocktail shaker and add the sugar. Let them sit for 5 minutes. Add the tequila and muddle the strawberries until they break down. Add an ice cube and shake well, then divide evenly between two glasses.

Top each glass with chilled champagne, drop in a jalapeño slice, and serve.
