This strawberry salad has been showing up in my lunches and snacks lately while berries are at their best. I toss sliced strawberries with coarse black pepper, fresh mint, crumbled feta and a light champagne vinaigrette — the combination balances sweet, tangy and savory notes beautifully.

Ingredients

  • 3 cups fresh strawberries, sliced or quartered
  • freshly ground black pepper
  • kosher salt
  • ¼ cup crumbled feta cheese
  • 1 tablespoon champagne vinegar
  • ¼ cup extra virgin olive oil
  • 2 tablespoons chopped fresh mint leaves
  • fresh mint leaves for garnish

Instructions
