How trashy can we get?

That’s the question.
Very trashy, it turns out. Who puts potatoes in a grilled cheese?
Apparently I do.

This idea came about because I had a giant pan of leftover sweet potato casserole in the fridge. Turning it into a grilled cheese felt like the most logical — and indulgent — solution.
It helps if your sweet potatoes are topped with marshmallows or a crunchy streusel; mine had both, which made the sandwiches ridiculously good.
And yes, we’re using whole grain bread, so that’s something, right?

Leftover Sweet Potato Casserole, Brie and Bacon Grilled Cheese

Ingredients
- 2 tablespoons unsalted butter softened for spreading
- 4 slices whole grain bread
- 1/3 cup
- leftover sweet potato casserole
- 4 ounces brie cheese
- 4 slices cooked bacon
Instructions

Heat a large skillet or griddle over medium-low heat.

To assemble the sandwiches, spread softened butter on the outside of each slice of bread. On the inside of two slices, add a slice or two of brie, the bacon, a generous spoonful of the sweet potato casserole and a little more cheese if you like. Top with the remaining slices, buttered sides up. Cook the sandwiches until golden brown on both sides and the cheese is melted. Serve immediately.
