Hi and happy Valentine’s Day!

I love this week’s menu—bright citrus salads, simple weeknight dinners, and of course pizza. Everything is easy to pull together and great for leftovers or meal prep.

What to eat this week
Start the week with a hearty honey mustard chopped chicken salad. It’s flavorful, holds up well for leftovers, and is perfect for prepping components separately for lunches.
For Taco Tuesday, try lime-loaded shrimp sheet pan fajitas. They come together quickly and everyone loves them. You can marinate the vegetables ahead of time and let the shrimp sit in the lime marinade for a few hours to boost flavor.
Next up, a quick and comforting ravioli soup that’s embarrassingly simple to make. Pair it with a crisp house salad for a complete, satisfying meal.
A salmon citrus avocado salad is perfect for the season, showcasing juicy citrus and creamy avocado. Use roasted salmon or smoked salmon for an even faster option.
For the weekend, make a honey chipotle chicken pizza with goat cheese. It’s packed with flavor, and the leftovers are just as good the next day.
Also try crispy, sticky chicken fingers with blue cheese sauce—they’re addictive. Serve them alongside a bright cilantro-lime tortellini salad for a crowd-pleasing combo.
For lunches this week I’ll be making a batch of summer chicken salad—it still tastes great this time of year. And for breakfasts, I’ll prep pumpkin protein pancakes to keep mornings easy and satisfying.
