Start the week with peanut noodles tossed with roasted broccoli. It’s one of our all-time favorite dinners—comforting, quick to make, and packed with flavor. The creamy, savory peanut sauce pairs so well with caramelized broccoli and chewy noodles.

For Taco Tuesday, try grilled corn enchiladas. They celebrate peak summer corn and are an easy way to add vegetables to your meal. The smoky, slightly sweet corn and melty cheese make these enchiladas a crowd-pleaser.

On Wednesday, serve salmon tacos with a corn–poblano salsa. The salsa is bright and slightly smoky, and it pairs perfectly with tender grilled or pan-seared salmon. If you have leftover corn from Tuesday, this is a great way to use it.

Make pulled pork with a chipotle cherry BBQ sauce for an easy, make-ahead dinner. Cook it low and slow in a slow cooker or oven, then shred and serve on buns. Leftovers freeze well and make quick lunches or easy dinners later in the week.

Next up is a shrimp kale Caesar salad—a lighter twist on a classic. Shrimp adds protein and a delicate seafood flavor, while the kale gives the salad satisfying texture. It’s simple, flavorful, and refreshing on a warm evening.

Finish the week with crispy baked parmesan chicken served over a lemony arugula salad. The chicken is crunchy and savory, while the lemon and peppery arugula keep the dish bright and balanced. It’s an easy, elegant dinner to wrap up the week.

For lunches, I recommend making a batch of summer chicken salad. It’s versatile—great on sandwiches, scooped over greens, or served with crackers. For breakfasts, try a batch of peanut butter and jelly breakfast cookies. They’re portable, nostalgic, and a tasty way to start a busy day.
