- 6 tablespoons butter
- 2 (10 ounce) bags mini marshmallows
- 1 teaspoon vanilla extract
- 6 cups Rice Krispies cereal
- 2 cups crushed kettle-cooked potato chips
- 2 ounces dark chocolate, melted
Instructions
- Spray a 9×13-inch pan with nonstick spray and set aside.
- In a large pot over medium heat, melt the butter. Continue to cook, swirling occasionally, until brown flecks form and the butter develops a nutty aroma. Reduce heat to low.
- Add one bag of marshmallows and about one-quarter of the second bag to the pot. Stir until the marshmallows are fully melted and the mixture is smooth and gooey. Remove from heat and stir in the vanilla.
- Fold in the cereal with a large spatula. When the cereal is about halfway incorporated, fold in the crushed kettle chips so they distribute evenly without getting crushed into dust.
- Fold in the remaining mini marshmallows so there are pockets of chewy marshmallow throughout. Press the mixture evenly into the prepared pan, using wax or parchment paper to smooth the top.
- Melt the dark chocolate (microwave in 30-second intervals, stirring between each) and drizzle over the top of the treats. Let the chocolate set.
