I adore this cucumber tequila soda—it’s bubbly, cooling and ideal for warm weather. It’s light, visually beautiful and tastes fantastic.

For years I’ve made cucumber vodka sodas, but switching to tequila here brings a bright, slightly savory edge that elevates the drink. Instead of using plain cucumber juice, I make a cucumber simple syrup—so the cucumbers are the syrup, adding concentrated flavor and a subtle sweetness.

I love keeping homemade ingredients on hand—syrups, dressings and sauces make weeknight entertaining and cocktails so much easier. I first shared this cucumber syrup in a cucumber spritz earlier this season, and it quickly became my official drink of summer. It’s that refreshing.

A classic tequila soda with lime is my everyday go-to: it’s simple, light and doesn’t leave you feeling sluggish. This version builds on that simplicity with a bright cucumber syrup and fresh mint.

Make the cucumber syrup a few days ahead and keep it refrigerated. When you’re ready, pour some syrup over crushed ice, add tequila and freshly squeezed lime juice, then top with bubbly soda water. A generous sprig of fresh mint pushed into the drink adds an aromatic finish and a hint of cooling flavor.

Serve immediately over crushed ice for the best texture and chill. It’s an effortless, elegant cocktail that feels both refreshing and special.

Ingredients
Cucumber Syrup
- 4 mini cucumbers, cut into pieces
- ½ cup water
- ¾ cup sugar
Tequila Soda
- 2 ounces cucumber syrup
- ½ ounce fresh lime juice
- 1 ½ ounces tequila
- bubbly soda water, for topping off
Instructions
- Place the cucumbers and ¼ cup of water in a blender. Puree until smooth with no chunks remaining. Pour the puree into a saucepan and add the sugar and remaining water. Warm gently, whisking until the sugar dissolves, then remove from heat.
- Strain the mixture through a fine-mesh sieve at least once (twice if needed) to remove any solids. Transfer the cucumber syrup to a jar and refrigerate; it will keep for a few days.
- Fill a glass with crushed ice and a few cucumber slices. In a shaker, combine the cucumber syrup, lime juice and tequila and shake briskly for about 30 seconds. Pour over the crushed ice and top with bubbly soda water. Garnish with a sprig of fresh mint, pressing it into the drink to release the aroma.
