This is the story of how I blended giant chocolate chip cookies into milkshakes — with homemade Bailey’s.

Not long ago I made nearly the same thing with Kahlúa, but this time I had a big batch of homemade Irish cream in the fridge. When you have a pitcher of that goodness staring back at you every time you open the fridge, it’s hard not to sample a little. Merry Christmas to me.

I’d already decided these spiked shakes would be the perfect place for some brown butter chocolate chip cookies. I imagined how incredible those cookies would be folded into a Bailey’s milkshake: rich, nutty brown butter, melty chocolate, and boozy cream. Then I reached for the cookies and discovered they were gone — vanished. I’m fairly certain there had been half a dozen dozen; maybe I ate them all. Maybe.
Luckily I was making these shakes on a Sunday at noon, so I was able to pick up my favorite chocolate chips and move forward. Totally worth the quick grocery run.

Ingredients
- 2 1/2 cups coffee ice cream
- 1 1/2 cups milk
- 1/2 cup Irish cream liqueur
- 2 large chocolate chip cookies + 1 more to crumble on top
- 6 ice cubes
Instructions

Add all ingredients to a blender and process until almost smooth, leaving some small pieces of cookie if possible. Pour into glasses, crumble a cookie on top, and serve immediately.
