Chocolate Frosted Raised Donuts with Potato Chips

Ingredients

  • 1 1/2 cups milk, whole or 2% is best
  • 1/3 cup water
  • 1/3 cup unsalted butter
  • 1 tablespoon honey
  • 2 packages active dry yeast, 4 1/2 teaspoons
  • 2 large eggs, lightly beaten
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon freshly grated nutmeg
  • 5 cups all-purpose flour, plus more for dusting
  • oil for frying

  • 4 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 1 teaspoon light corn syrup
  • 1/4 cup milk
  • 3 ounces milk chocolate, chopped
  • 1 cup powdered sugar
  • 1 cup kettle cooked potato chips, crushed

Instructions

  • Warm the milk and water in a saucepan over low heat until just warmed.
  • Place the butter in the bowl of an electric mixer and pour the warm milk over it, stirring until it melts. Add the honey and sprinkle the yeast over the mixture, stirring briefly. Let sit for about 5 minutes until the yeast is foamy.
  • Add the eggs, sugar, salt, nutmeg, and half of the flour to the yeast mixture. Using the paddle attachment, beat on low speed until combined and sticky. Add the remaining flour and continue beating, gradually increasing speed to medium until the dough comes together. It will be sticky. Switch to a dough hook and knead on medium speed for 5 minutes, until the dough pulls away from the bowl sides.
  • Transfer the dough to a lightly oiled bowl, cover, and let rise in a warm place for one hour.
  • Turn the dough onto a floured surface and roll to about 1-inch thickness. Cut rounds with a biscuit cutter and use a smaller cutter for the centers. Place rounds on a baking sheet, cover, and let rise for about 30 minutes.
  • Heat oil in a large pot to about 350–365°F (175–185°C). Fry donuts 2–3 at a time for roughly 1 minute per side until golden. Drain on paper towels and let cool completely before glazing.

  • In a small saucepan over medium heat, combine butter, vanilla, corn syrup, and milk. Once the butter melts, reduce heat to low and add chopped chocolate. Whisk until smooth, then remove from heat and whisk in powdered sugar until no lumps remain. Dip each donut into the glaze and immediately sprinkle with crushed potato chips. Let set for about 15 minutes.
