After spending seven hours on the couch on New Year’s Eve, I threw on my comfiest XXL sweatpants, an old sweatshirt, piled my hair into a messy bun, and went to my aunt and uncle’s to celebrate — no makeup and totally casual.
My husband must love having such a glamorous, sophisticated wife.
We grazed on appetizers that had been sitting out for a while, and then my aunt brought out an incredible dessert.
Our friend Barb had made these amazing ice cream crepes. She’s been a lifesaver, helping plan my wedding and making the day unforgettable.
These ice cream crepes were honestly one of the best desserts I’ve ever had. My husband agreed — he ate six. I’m glad I’m not the only glutton in the house.
The crepes were light and fresh—exactly what you want after rich holiday food.
It was my first time both eating and making crepes. I was intimidated before, but now I’m hooked. A “how to make crepes” post is coming soon.

The ice cream crepes are simple: lay a cooled crepe on a plate.

Scoop some ice cream into the center.

I used a triple-vanilla ice cream — vanilla bean, French vanilla, and regular vanilla. If you’re into flavors, you’ll notice the difference.
Next, add the toppings.

If there were a dessert that could open the heavens, this might be it. Just look at it — it’s possibly the only dessert that could tempt me to give up others.
It’s truly phenomenal.
Ice Cream Crepes
12–14 fresh crepes (recipe coming soon)
1/2 gallon vanilla ice cream
2 cups freshly pureed strawberries
Raspberries and blueberries for topping
Scoop ice cream into the center of a crepe. Roll the crepe like a burrito and place it in a large baking dish. Freeze until firm.
Once firm, remove the crepes and reshape if needed; sometimes the ice cream needs a little nudging to look neat. Let sit at room temperature for about five minutes to soften slightly.
Top with pureed strawberries, fresh raspberries, and blueberries.

I’m not a huge ice cream fan, and yet these are simply incredible. For a lighter version, substitute frozen yogurt for the ice cream — a perfect, lighter dessert to start the new year.
