I love this week’s menu! It features two of my favorite meatless dishes, some cozy comfort food, and a new favorite salad.

Here’s what I’m cooking this week—simple, satisfying meals that are easy to prepare and full of flavor. What are you planning to make?
What To Eat This Week

Start the week with a halloumi hummus bowl. It’s bright, hearty, and perfect for a meatless meal.

Next, enjoy a blackened chicken chopped salad. The raspberry chipotle vinaigrette adds a wonderful smoky, sweet heat.

Midweek, try lemon garlic fish sticks served with jalapeño tartar sauce for a fun, flavorful twist on a classic.

Now that the weather is shifting, an Irish beef stew with herb dumplings is ideal for a cozy dinner—rich, warming, and satisfying.

For another comforting option, mini turkey meatloaves paired with cauliflower mash are a great, family-friendly meal.

End the week with sheet pan gnocchi and roasted vegetables—easy to throw together and full of roasted flavor.

For lunch, my go-to is a Greek orzo salad—bright, portable, and perfect for leftovers.

And for breakfast, I’ll make a batch of almond butter baked oatmeal cups—easy to reheat and great for busy mornings.
