Ingredients
Green Goddess Dressing
- ⅓ cup plain Greek yogurt
- 3 tablespoons mayonnaise
- 2 garlic cloves
- ⅓ cup baby arugula or spinach
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh basil
- 1 tablespoon snipped chives
- 1 tablespoon freshly squeezed lemon juice
- Pinch crushed red pepper flakes
- Big pinch kosher salt and pepper
Slaw
- 1 small head green cabbage
- 2 large carrots, finely grated
- 1 red onion, thinly sliced
- ¼ to ⅓ cup green goddess dressing
Burgers
- 1 pound lean ground turkey
- Kosher salt and pepper
- 4 green onions, thinly sliced
- 2 garlic cloves, minced
- 1 large egg, lightly beaten
- ¼ cup seasoned breadcrumbs
- 1 tablespoon olive oil
- 4 to 6 buns, for serving
Instructions
Green Goddess Dressing
- Add all dressing ingredients to a food processor or blender and blend until smooth and combined.
Slaw
- Combine cabbage, grated carrots, and sliced onion in a large bowl. Toss with the green goddess dressing until well coated. Refrigerate until ready to serve.
Burgers
- Season the ground turkey with salt and pepper. Add the green onions, minced garlic, beaten egg, and breadcrumbs. Mix gently until just combined—do not overmix.
- Form into four patties, or six smaller patties if preferred.
- Heat the olive oil in a skillet over medium heat. Cook the burgers until deeply golden on both sides, about 5 minutes per side, until the internal temperature reaches 160°F (71°C).
- To assemble, spread green goddess dressing on the buns, top with a burger, add a generous scoop of slaw, and finish with the top bun. Serve immediately.
