Rice Krispie treats are one of my guilty pleasures — the classic homemade kind, not the foil-wrapped prepackaged versions. Those boxed treats never quite matched the real thing made from gooey melted marshmallows and butter.

The texture is everything. Those soft, squishy squares were a staple of my childhood. Pair them with a thick, creamy shake and a fat straw, and you’ve got the ultimate nostalgic dessert cocktail.

Spiked Rice Krispie Treat Shake Shooters

Ingredients

  • 3 tablespoons unsalted butter
  • 2 1/2 cups mini marshmallows
  • 1/2 teaspoon vanilla extract
  • 4 cups rice cereal
  • 3/4 cup milk
  • 1/4 cup vodka (or marshmallow-flavored vodka)
  • 2 cups vanilla ice cream
  • 1/3 cup marshmallow fluff

Instructions

  • To make the Rice Krispie treats: melt the butter in a large pot over medium heat, whisking until it sizzles and small brown bits form, about 5 minutes. Reduce heat to low, add the marshmallows and stir until fully melted. Stir in the vanilla. Remove from heat, fold in the rice cereal until combined, then press into an 8×8 baking dish. Let rest for 15 minutes.
  • To make the milkshakes: combine the milk, vodka, vanilla ice cream and marshmallow fluff in a blender. Crumble about three-quarters of the Rice Krispie mixture and add it to the blender. Blend until smooth but still thick. Pour into glasses. Cut the remaining treats into small pieces and scatter them on top. Serve immediately with wide straws.
