Lucky for you, I made one: a coconut limeade cooler. It’s frosty, bright with lime, and perfectly refreshing for the unofficial end-of-summer long weekend.

Think of this as a slushie crossed with a frozen, nonalcoholic margarita — intensely limey with a creamy coconut finish. Use homemade limeade or a good-quality bottled one to keep things simple.
To echo nostalgic cravings: a frosty treat is hard to beat. If you’re reminiscing about classic frostys, this drink gives a similar cool, creamy vibe — possibly even good for dunking fries into, if that’s your thing.

I use full-fat canned coconut milk for extra creaminess and an almost ice-cream texture. The balance of tart lime and rich coconut turns this into a drinkable dessert: a cooling snack that feels indulgent without being heavy.

With Labor Day approaching, you’ll want easy, tasty things on the menu. If you’re grilling, a juicy burger pairs nicely with a cold slushie — whether it’s a havarti-topped BBQ burger, a mushroom and Dijon aioli cheeseburger, or whichever summer favorite you prefer. For snackable party food, a creamy white pizza dip is always welcome. If you’re into boozy summer cocktails, a watermelon frosé is another great option for warm-weather entertaining.
But if you pick one winner for hot-weather refreshment, coconut limeade slushies are hard to beat.

Coconut Limeade Slushies
Ingredients
Limeade
- 2 1/2 cups freshly squeezed lime juice
- 2 1/2 cups water
- 2/3 cup simple syrup
- 1/3 cup freshly squeezed lemon juice
Slushies
- 3 to 4 cups limeade
- 1 15 ounce can full-fat coconut milk
- 2 to 3 cups ice
- lime wedges for garnish
Instructions
Make the limeade

Stir together the simple syrup, water, lime juice and lemon juice. Taste and adjust sweetness or acidity as needed.
Make the slushies

Combine the limeade, coconut milk and ice in a blender. Blend until the mixture reaches an icy, slushie consistency. Pour into glasses and garnish with lime wedges. Serve immediately.
