Years ago I shared frozen coconut mojitos, and they remain a seasonal favorite. They’re light, icy and ideal for hot weather. Lately the frosé trend has been everywhere, but I kept thinking about making a frozen mojito that was watermelon-forward. Since frozen cocktails are blended, they’re easy to make in large quantities for gatherings.

This recipe started by accident. I’d cut up a huge watermelon for snacks and froze the excess cubes because I didn’t have room in the fridge. Using frozen fruit instead of ice keeps the drink bright and undiluted — a trick I’ve used before with wine or coffee ice cubes. Frozen watermelon blends into a smooth, naturally sweet base that works beautifully for cocktails and mocktails alike.

My herb garden is overflowing with mint, so I make a mint simple syrup and add fresh leaves straight to the blender. You’ll see tiny green specks in the finished drink — that’s fresh mint blended in. Fresh lime juice is essential too; it brightens the watermelon and balances the sweetness.

For rum, choose white rum or coconut rum. I tested both and preferred white rum for a cleaner flavor, but coconut rum adds a subtle tropical note if you like that. Avoid dark or spiced rums for this recipe — they overpower the fresh fruit.
I also add a splash of seltzer right into the blender for light effervescence. It keeps the drink lively without diluting it.

Finish each glass with extra mint, lime wedges and a straw for easy sipping. If you prefer a nonalcoholic version, skip the rum and keep the watermelon, lime juice, mint syrup and seltzer — just as bright and refreshing.
Either way, these are a new favorite — a grown-up slushie that’s perfect for summer.

Ingredients
- 2 ½ cups watermelon cubes, frozen
- ½ cup white or coconut rum
- ⅓ cup freshly squeezed lime juice
- ¼ cup mint simple syrup, recipe below
- ½ cup seltzer water, you could use lime or watermelon flavor here too!
- lime wedges for garnish
- fresh mint leaves for garnish

- 1 cup water
- 1 cup sugar
- 1 handful of fresh mint leaves
Instructions

To make the mint simple syrup, combine water, sugar and a handful of fresh mint leaves in a saucepan. Heat over medium, whisking until the sugar dissolves and the mixture comes to a gentle boil. Let it bubble for a minute, then remove from heat and cool completely. Store any extra syrup in the fridge for coffee or cocktails.

Freeze watermelon cubes for at least 6 hours or overnight.

In a high-powered blender, combine frozen watermelon cubes, rum, lime juice and mint simple syrup. Blend until smooth. Add seltzer and pulse briefly to combine. Taste and add more syrup if you prefer it sweeter.

Pour into chilled glasses and garnish with mint and lime wedges. Serve immediately.
