Let’s talk about the most unboring green beans.

They might look simple, but these green beans are anything but boring. This skillet side is packed with flavor and topped with everything I love: crispy bacon, sweet caramelized shallots, crunchy toasted almonds, garlicky browned-butter breadcrumbs, a touch of heat from red pepper flakes, and tangy feta to finish.

Quick note: I’m somehow still wrapped up in Thanksgiving vibes even though the holidays are streaming by. Between seasonal recipes and life getting busier, simple, delicious sides like this are what I keep coming back to.

This dish is a great alternative for anyone who isn’t into a classic green bean casserole. It feels familiar and comforting, but with a few twists that make it fresh and exciting. The beans are toasted in a skillet—yes, in bacon grease if you like—so they end up bright, slightly crunchy, and deeply flavored.

Here’s what’s in it:

  • Bacon, chopped and crisped for smoky flavor
  • Caramelized shallots for sweetness and depth
  • Toasted almonds for crunch
  • Garlic brown-butter breadcrumbs for richness and texture
  • Crushed red pepper flakes for a bit of heat
  • Crumbled feta for a bright, tangy finish

The feta is essential: it cuts through the richness and adds a lively, salty pop that pairs beautifully with the sweet shallots and browned butter breadcrumbs. These beans are easy enough for a weeknight, and impressive enough for holiday gatherings—perfect any time you want a simple but memorable side.

They’re also great on their own. If you need a no-fuss dinner, these can absolutely be eaten straight from the skillet with a fork.

Loaded Skillet Toasted Green Beans

Yield:
4 to 6
Total Time:
30 minutes mins

Ingredients

  • 4 slices bacon, chopped
  • 2 shallots, sliced
  • 2 pounds fresh green beans
  • 1/3 cup toasted almonds
  • 4 ounces feta cheese, crumbled

Garlic butter breadcrumbs

  • 2 tablespoons unsalted butter
  • 1 garlic clove, minced
  • 1/3 cup seasoned panko breadcrumbs
  • 1/8 teaspoon crushed red pepper flakes

Instructions

  • Heat a large skillet over medium-low and add the bacon and sliced shallots. Cook until the bacon is crisp and the shallots are browned, about 8 to 10 minutes. Transfer to a bowl and reserve the fat in the skillet.
  • Add the green beans to the skillet. If you need more fat, add a tablespoon of butter or olive oil. Cook over medium, stirring occasionally, until the beans are bright and tender-crisp, about 5 to 6 minutes. Return the bacon and shallots to the pan and toss with the beans. Stir in the toasted almonds and crumbled feta.
  • Sprinkle with the garlic brown-butter breadcrumbs and serve immediately.

Garlic butter breadcrumbs

  • Melt butter in a small saucepan over medium heat and whisk until it begins to brown and develops nutty bits. Remove from heat and let stand 2 minutes. Whisk in minced garlic, then stir in panko and red pepper flakes until coated. Set aside.
