Who doesn’t want a bright, peachy cocktail to celebrate the 4th?

I’m newly in love with the gin and tonic. It’s only been a few months, really. Besides cake, which is always a constant, gin and tonic has quietly become my go-to summer sipper.
I’ve had great gin and tonics before and some that tasted overly piney. Lately I’ve been experimenting with peaches, and this version—where fresh peach lightly sweetens the drink—is my favorite. Paired with a crisp tonic (Fever-Tree is my pick for its balanced bite) it’s refreshingly perfect.

Right now I adore anything peach-forward until the fruit itself is so perfect it needs no embellishment. In this cocktail the peach adds just a whisper of sweetness that complements the tonic and bright lime. It’s light, summery, and easy to sip.

My grandfather has always been a gin enthusiast—he prefers Beefeater and was amused when I told him I keep gin at home. That conversation nudged me further into trying different g&t combinations, and this peach version is what I reach for on hot days. It’s refreshing without feeling heavy.
When the weather’s hot I want something light that won’t spoil my appetite. My usual is a vodka soda with lime because it’s clean and barely sweet, but this peach gin and tonic gives me a touch of sweetness while staying delicate. It’s that perfect middle ground between a plain highball and something sugary.

This cocktail feels a little grown-up—elegant and simple. It pairs well with a lazy afternoon of appetizers or a sunny backyard gathering. I’ll admit I still crave nachos and a frozen margarita sometimes, but for a balanced, refreshing drink, peach gin and tonic is my top pick these days. And yes, I will probably pinch your lime wedge.
